McHenry Hohnen Sauvignon Blanc typically draws from the Calgardup Brook Vineyard. Just inland from the Margaret River coastline, its climate is strongly influenced by the Indian Ocean.
The fruit is picked in the cool hours of the night and whole berry pressed. The juice with some solids is fermented in French oak barriques and puncheons. Frequent lees stirring balances the acidity.
After six months in barrel, the wine is transferred to tank. It undergoes extended maturation on fine lees prior to bottling.
Light straw, McHenry Hohnen Sauvignon Blanc is a fresh yet textural wine with a core of ripe tropical fruit flavours and saline acidity. Cellaring potential is five years.
